Bacon And Spinach Pasta Bake Recipe
Relatively simple pasta bake.
Serves 4
Ingredients
- 10½oz / 300g unsmoked back bacon rashers
- 1 medium onion
- 1 red pepper
- 3½oz / 100g baby leaf spinach
- 4oz / 115g light soft cheese with garlic and herbs
- 7oz / 200g wholewheat fusilli
- 3½oz / 100g mature cheddar
- 1 tbsp / 15ml vegetable oil
Method
- Put the oil in a large pan over a medium heat. Chop the onion and sauté until starting to brown. Chop the bacon and add to the pan, and cook for 5-10 minutes until starting to brown. Chop the red pepper and add to the pan, cook for a few more minutes.
- Add the soft cheese to the pan, and stir until melted. Add the spinach and cook until wilted.
- In a separate pan, bring water to the boil and add pasta. Cook for 10-12 minutes, or until past al dente and getting soft. Drain.
- Preheat oven or grill, 200° C / 400° F / Gas Mark 6.
- Combine pasta with sauce. Place into a baking tray. Grate cheddar cheese and sprinkle evenly over the top. Grill until browned. Serve immediately.
