Ingredients

  • 2 eggs
  • 2fl oz / 60ml semi-skimmed milk
  • a pinch of salt
  • a pinch of ground black pepper
  • 1oz / 30g mature cheddar
  • 2 tsp / 10ml vegetable oil

Method

  1. Beat the eggs with the milk, salt and pepper. Grate the cheese separately.
  2. Heat the oil in a non-stick frying pan over a medium-high heat, swirling the pan to coat with the oil. Add the egg mixture and fry, occasionally using a fish-slice to check the omelette isn't sticking.
  3. When the omelette is nearly solid and nicely browned, cover with the cheese, allow to melt a little, then slide the omelette onto a plate, folding it in half. Leave for a minute or two to allow the cheese to continue melting and the egg to finish cooking, then serve.
