Cheese Omelette Recipe

Ingredients
- 2 eggs
- 2fl oz / 60ml semi-skimmed milk
- a pinch of salt
- a pinch of ground black pepper
- 1oz / 30g mature cheddar
- 2 tsp / 10ml vegetable oil
Method
- Beat the eggs with the milk, salt and pepper. Grate the cheese separately.
- Heat the oil in a non-stick frying pan over a medium-high heat, swirling the pan to coat with the oil. Add the egg mixture and fry, occasionally using a fish-slice to check the omelette isn't sticking.
- When the omelette is nearly solid and nicely browned, cover with the cheese, allow to melt a little, then slide the omelette onto a plate, folding it in half. Leave for a minute or two to allow the cheese to continue melting and the egg to finish cooking, then serve.
