Chicken Raisukaree Recipe

This is my attempt to recreate the Wagamama dish. I used nigella (black onion) seeds instead of black sesame seeds, but only because I couldn't find black sesame seeds in my local supermarket. I omitted other ingredients to suit the tastes of my family, but for a more authentic experience you can add spring onions and finely sliced red chillies. I don't know how close the sauce is to what Wagamama does, but coconut cream, red thai curry paste and concentrated chicken stock tastes pretty good, and looks the part.

Ingredients

  • 12oz / 340g skinless chicken breasts
  • 1 tbsp / 15ml ghee
  • 1 red onion
  • 2 garlic cloves
  • 1 red pepper
  • 4oz / 115g mangetout
  • 3 tbsp / 45ml red curry paste
  • 8fl oz / 240ml coconut cream
  • 1oz / 30g concentrated chicken stock
  • 1oz / 30g coriander
  • 3 lime wedges
  • 1 tbsp / 15ml nigella seeds
  • 3oz / 90g basmati rice

Method

  1. Preheat the oven to 200°C / 400°F / Gas Mark 6. Place the chicken breasts on a grill tray and grill for 20 - 25 minutes, until cooked through and starting to brown on the outside.
  2. In a large pan, heat the ghee over a low heat. Slice the red onion into strips, and fry until translucent. Finely chop the garlic cloves and add to the pan. Cut the red pepper into large squares and add to the pan.
  3. Add the mangetout to the pan and cook for a minute. Add the red curry paste and cook for another minute. Add the coconut cream and concentrated chicken stock, and stir thoroughly. Keep warm on a low heat.
  4. Slice the chicken breasts into thin strips and stir into the sauce.
  5. Cook your rice as per the instructions on the packet. Split into three and set on one side of the plate. Spoon the chicken, vegetables and sauce evenly between the plates. Sprinkle each liberally with nigella seeds, chopped coriander. Place a lime wedge on each plate.
