Chicken Tikka Thighs Recipe
Serves 4
Ingredients
- 18oz / 500g chicken thighs
- 3½oz / 100g low fat greek yoghurt
- 2 tsp / 10ml tikka curry powder
- 2 tsp / 10ml paprika
- 2 tsp / 10ml lemon juice
- 1 tbsp / 15ml tomato puree
- 2 garlic cloves
- 1oz / 30g root ginger
Method
- Finely chop and/or crush garlic and ginger into a glass bowl. Add tomato puree, and mix in tikka curry powder, paprika, lemon juice and greek yoghurt.
- Place the deboned chicken thighs in the marinade and mix until coated. Refrigerate for 1-2 hours.
- Preheat the oven to 200°C / 400°F / Gas Mark 6.
- Place the marinated thighs on a grill tray and bake for 15-20 minutes until just starting to brown.
- Serve with basmati rice and raita.
