Garlic Roast Potatoes

Ingredients

  • 18oz / 500g potatoes
  • 2oz / 50g duck fat
  • 2 garlic cloves

Method

  1. Preheat the oven to 200°C / 400°F / Gas Mark 6. Place the duck fat in a roasting tray and place in the oven to melt the duck fat.
  2. Finely chop or crush the garlic cloves and add to the fat. Thoroughly wash the potatoes and dice into bite-size pieces. Add the chopped potatoes to the fat carefully and stir and baste them.
  3. Roast for 45 minutes - 1 hour until golden and crisp, checking and re-basting every 15-20 minutes.
