Garlic Roast Potatoes Recipe

Ingredients
- 18oz / 500g potatoes
- 2oz / 50g duck fat
- 2 garlic cloves
Method
- Preheat the oven to 200°C / 400°F / Gas Mark 6. Place the duck fat in a roasting tray and place in the oven to melt the duck fat.
- Finely chop or crush the garlic cloves and add to the fat. Thoroughly wash the potatoes and dice into bite-size pieces. Add the chopped potatoes to the fat carefully and stir and baste them.
- Roast for 45 minutes - 1 hour until golden and crisp, checking and re-basting every 15-20 minutes.
