Individual Chocolate Orange Cheesecakes Recipe
Makes 4
Ingredients
- 2½oz / 75g digestive biscuits
- 1oz / 25g butter
- 9oz / 250g quark
- 3½oz / 100g 70% cocoa dark chocolate
- 3oz / 85g orange jelly cubes
- 5fl oz / 150ml boiling water
Method
- Melt the butter. Crush the digestives and add to the melted butter. Mix thoroughly. Push the base mix into the bottom of four individual ramekins, smoothing the top, and refrigerate for 30 minutes - 1 hour.
- In a stand mixer or food processor, whisk the quark. Melt the chocolate and add it to the cheese. Whisk until incorporated. Dissolve the orange jelly cubes into the boiling water, and stir until dissolved. Whisk this into the chocolate cheese mixture. At this point the filling should be quite liquid.
- Pour or spoon the filling into the ramekins. Refrigerate for a couple of hours until set.
