Low Fat Tiramisu Recipe

This version of the classic is specifically crafted to be low fat. This is mainly achieved by using quark instead of other, higher fat cheeses. The creaminess is enhanced with vanilla and sugar to cut through the somewhat acidic cheese.

Ingredients

  • 9 sponge fingers
  • 2 espresso shots
  • 9oz / 250g quark
  • 2oz / 55g golden caster sugar
  • 1 tbsp / 15ml semi-skimmed milk
  • 1 tsp / 5ml vanilla extract
  • 2 tsp / 10ml cocoa powder

Method

  1. Place the sponge fingers in the base of a 5" x 3" container.
  2. Drizzle the espresso shots evenly over the sponge fingers, allowing the coffee to soak in. If there's any left, pour it in. Set the dish aside.
  3. Combine the sugar, vanilla, milk and quark in a bowl. Stir until smooth.
  4. Spoon the mixture carefully over the coffee-soaked sponge fingers. Gently tap the dish until the mixture levels out.
  5. Using a sieve, evenly dust the quark mixture with cocoa.
  6. Refrigerate for 1-2 hours before serving.
