Ingredients

  • 4oz / 115g plain flour
  • 10fl oz / 284ml semi-skimmed milk
  • 1 egg
  • a pinch of salt
  • 2fl oz / 60ml vegetable oil

Method

  1. Beat together the eggs, milk and salt. Sift in the plain flour and beat to a smooth batter. Set aside for 15 minutes.
  2. Heat a non-stick frying pan to a medium-high heat.
  3. Add 10ml / 2 tsp of vegetable oil to the pan, heat and swirl to coat the pan. Pour in 1/6 of the batter, swilling around the pan to coat the base as quickly as possible. After a minute or two, once the top has gone solid, flip the pancake over. Cook on the other side for another minute until browned.
  4. Repeat this process, adding oil as necessary, for each pancake.
  5. Serve immediately, with butter and maple syrup, or lemon juice and caster sugar.
