Quack Salad Recipe
Trying to make salads interesting is the curse of all January dieters. The main trick? Don't use lettuce. It's bitter and watery, and will put off any salad beginner. This one uses spinach and rocket, which are soft and flavourful.
Serves 1
Ingredients
- 1oz / 30g baby leaf spinach
- 1oz / 30g wild rocket
- 1oz / 30g spring onions
- ½ red pepper
- 4oz / 115g roast potato cubes
- 2oz / 55g feta cheese
- 2 tsp / 10ml olive oil
- 2 tsp / 10ml balsamic vinegar
Method
- Cut the red pepper into short, thin strips. Wash the spinach and rocket leaves, then toss together with the red peppers.
- Cut the feta into small pieces and scatter over the top of the leaves with the fried potatoes. Remove the tips and roots of the spring onions, wash, and finely chop. Scatter these over the top.
- Drizzle the oil and balsamic vinegar over the salad to dress.
