Ingredients

  • 18oz / 500g potatoes
  • 2oz / 50g duck fat
  • a pinch of salt

Method

  1. Wash and peel the potatoes. Cut into large chunks, about half a medium potato or a third of a larger one. For smaller ones, leave whole.
  2. Preheat the oven to 190°C / 375°F / Gas Mark 5. Place the duck fat in a roasting tray and place in the oven while it's warming.
  3. Boil the peeled potatoes in slightly salted water for about 10 minutes. Drain, return to the pan and shake to rough up the edges.
  4. Carefully, add the potatoes to the duck fat, and baste them all thoroughy. Return the tray to the oven and roast for 45 minutes - 1 hour, turning and basting the potatoes every 20-30 minutes. Cook until golden.
