Roast Potatoes Recipe
Serves 3
Ingredients
- 18oz / 500g potatoes
- 2oz / 50g duck fat
- a pinch of salt
Method
- Wash and peel the potatoes. Cut into large chunks, about half a medium potato or a third of a larger one. For smaller ones, leave whole.
- Preheat the oven to 190°C / 375°F / Gas Mark 5. Place the duck fat in a roasting tray and place in the oven while it's warming.
- Boil the peeled potatoes in slightly salted water for about 10 minutes. Drain, return to the pan and shake to rough up the edges.
- Carefully, add the potatoes to the duck fat, and baste them all thoroughy. Return the tray to the oven and roast for 45 minutes - 1 hour, turning and basting the potatoes every 20-30 minutes. Cook until golden.
