Tikka Curry Powder Recipe
This is a good general purpose curry powder. I use it for tikka, daal, dhansak, saag, and coronation chicken.
Makes 16
Ingredients
- 4 tsp / 20ml paprika
- 4 tsp / 20ml ground coriander
- 1 tbsp / 15ml ground cumin
- 1 tbsp / 15ml onion powder
- 2 tsp / 10ml salt
- 2 tsp / 10ml dried coriander leaf
- 2 tsp / 10ml garlic powder
- 1 tsp / 5ml ground fenugreek
- 1 tsp / 5ml cinnamon
- 1 tsp / 5ml ground ginger
- 1 tsp / 5ml cayenne pepper
- 1 tsp / 5ml ground black pepper
- 4 cloves
- 2 cardamom pods
Method
- Open the cardamom pods and empty the seeds into a pestle and mortar. Add the cloves and grind into a powder. Place these with all the other ingredients into a jar / airtight container which the mix can be stored in and shake well to combine.
